Gourmet burgers in Copenhagen – Halifax, Haché, Cocks & Cows and MASH
The gourmet burger bar phenomenon is flourishing in Copenhagen. Over the course of past month or so I have been conducting my own little test of 4 of the city’s gourmet(like) burger joints: Halifax, Haché, Cocks & Cows and MASH.
MASH is (of course) not a burgerbar, but a steak house. I have chosen to incorporate them in this little exercise, since I did eat a burger there, and I think the MASH-burger would be classified as a “gourmet burger”.
Since the whole concept of gourmet burger bars is to offer burgers that are composed by more special ingredients than what is in your average burger, the burgers that I have eaten are of course different. A complete comparison of each burger is therefore not possible or fair, but what I strive to do is to give a brief overall impression of the specific burger (and fries) I ate.
I know there are several other burger places that would fall into the category of “gourmet burger place” in Copenhagen. These could of course be included, but I can only eat so many burgers over a month.

Halifax
Halifax opened a couple of years ago and has now expanded to three location across town. There are 9 different burger variants on offer, most of them named after a location which the burger content is inspired by. There are different sides: fries, mashed potatoes, salad and tortilla chips. One side order and one dipping sauce are included in the burger menu.
I chose an untraditional version: “Krete”. The Krete burger came with beef, red onions, salad, tomato, feta cheese, olive tapenade and tzaziki, and I chose fries and aioli.
Pros: Good flavor in beef, lovely greasy Greek filling
Cons: I didn’t care much for the fries. They’re more wedges than fries and too much potato for my liking.

Haché Gourmet Burger
Haché Gourmet Burger is the latest addition to the gourmet burger scene. Despite of the name being exactly the same as a London based burger chain, they are not affiliated. There are 15 different burgers to choose from, but fries is the only side order available. I chose: “Haché Special” with Gruyère, caramelized onions and fried mushrooms + French fries + aioli.
Pros: Good garlic mayo, okay fries.
Cons: Too much bread, too little beef. The Gruyère did not taste of much and did not add the wanted extra touch

Cocks & Cows
Cocks and Cows opened a couple of months ago and it seems things are going well. Walking in on a week day night without a reservation and getting a table is not easy. 8 different burger variations and 6 side orders are on offer. I chose Cheese ‘N’ Smoke: beef, cheddar, smoked bacon, red onion, smoked salt and ketchup and fries with vinegar powder and aioli.

Pros: Deep smokey flavor, excellent fries with the rights combination of crispiness and softness. I love the vinegar powder on their fries
Cons: Several seatings a night. Can feel a bit rushed

MASH
MASH is as stated not a burger bar, but a steak house, with three locations (2 in Copenhagen and one in Aarhus). See more about MASH here. I know it’s not completly fair to include MASH, but as this is not a scientific analysis, I did it anyway. The burger came with fries and chili mayo. Other side orders were available at extra cost.

Pros: By far the best beef. 250 g of flavorpacked beef.
Cons: The price tag
